Well, Yakumo Oomori went through the trauma first and as he went through his own, the guy who was abusing him started that in the first place. Not much was known before his imprisonment but Yakumo developed a sadistic personality that mirrors his interrogator as a means of escaping the reality of his torture. He’s also a manipulative and deceitful ghoul who would be violent in order to get what he desires. Then he began doing so to his victims.

The finger cracking was another trait that Yakumo inherited from his abuser.

Counting backward, minus 7 each time, was another way that he was tortured, making him count through out his time of the interrogation and suffrage.

As Kaneki was experiencing his own pain from Yakumo, Yakumo was repeating the same torture to others that he himself went through. So if you remember correctly, through out the last 2 episodes Kaneki is in terrible pain and Yakumo is making him count, minus 7 from 1000, and downward. And of course at the end Kaneki has devloped this also insane mind and begins the same torture but now onto Yakumo.
